METHOD

Reserve 1 cup pasta water before draining - While pasta cooks, heat oil in skillet over medium-high heat
- Cook bacon until golden and crispy (5-6 minutes)
Remove with slotted spoon, leaving fat in pan - Lower heat to medium, add garlic
Cook until fragrant but not brown (1 minute) - Add cooked pasta to skillet
Toss with bacon fat and garlic - Add butter, reserved pasta water, bacon
Stir until sauce becomes silky - Season with salt and pepper
Add Parmesan, toss until melted
